Looking good. I should've taken the day off and come for a visit. You shouldn't have to so that all by yourself.
 
My taste tester Bubba (in the backround) said it was time.
Pulled it after 9 hours @250. Didn't have butcher paper so wrapped it foil. So far everything going as planned. More confident in my ceramic smoker too. It took about 30 min to get the vents set for 250 deg to start, but once I did I never touched it. Matter of fact when I took it off the grill to put in the cooler to rest it was still at 250. Could have picked a better day weather wise. In the low 50's 15-20kt winds.

Nailed it, I think! Slightly dry on the ends. Wifey said the fat was like warm butta on bread.
