The last time I made short ribs they came out too spicy and too strong of flavor for my kids. I forgot the recipe but it did have 3-4 types of pepper in it. Does anyone have a recommendation for a nice simple rub that has good flavor but not overpowering?

For my grand kids I always just stick to S&P and they slather their favorite sauces at the table.

Edit: I read the OP quickly and thought we were talking about pork ribs. I agree that S&P is the way to go.

In contrast to the flood of s&p responses try this, basic run just leave out the cayenne.

I often use Grill Mates Montreal steak rub ... I have also used it on brisket too.... Never let's me down.

For kids palettes just keep it simple as pointed out above. Salt and pepper and if feeling a little froggy add a little bit of onion powder and/or garlic powder.
