Did some lollipop chicken for Fathers day, figured while the butts were on we would practice for competition.

1. Prepped and rubbed the night before

Nice, what's the proper way to prepair the legs? Just cut the access skin?
 
Those look great. Always wanted to try these. What purpose does the foil have?
 
man, there are so many questions i want to ask you about that cook. i can see all the work that went into getting them like that. THEY LOOK LIKE ART!

Basically take and cut the skin and tendons about 1/2" below the knuckle and pull that skin off. Then take and work the meat down and remove the rest of the tendons and the smaller bone that is connected to the larger leg bone.

What did the bones look like at the end? The skin/meat looks great.

Bones looked good. Not burnt which is the reason for the foil

Are you able yo achieve bite through skin? I have played around with it a few times.

Every piece had a nice bite through skin on it. Had the family try it and all of them said they loved them.
