Aussie that looks damn good. I didn't know that a fatty would hold together without the bacon for support. Gives me some new ideas thanks for sharing.
 
So what flavor does Banksia pods give? Worked out my google-fu a bit and all I could come up with it for smoking was your pickled pork?

I'd still hit that fatty in a major way!

Closest I can think of is gum leaf, very light and Australian bush.
I do not believe most of us have the heavy smoke fix that you Americans have .
Wife is happy so that's what counts:laugh:
