For this years turkey I'm thinking about smoking the turkey in the off-set and then finishing it off in the deep frier. It's about a 12lb turkey so maybe 2 hours at 225 degrees to apple wood smoke and then about 40 minutes in the deep frier. Has anyone here tried this? What was your experience? Any suggestions? Thanks for reading.

Sounds like a good idea...

I have smoked chicken wings then finished them in the fryer with outstanding results.

Sounds like a future cooking project for me, let us know how it turns out...

I think that Bradley Smoker has this method in their recipes. I cold smoked a turkey for 4 hours with apple and deep fried with good results. It wasn't so outstanding that I would go to the trouble again.
Let us know how yours does.
