Costco prime brisket

My bge is loaded up ready to go. I'll fire it up around 11 tonight and put the brisket on around midnight. It might be tough staying up until midnight after being at Disneyland all day today.

After trimming the brisket it weights a little over 10 lbs im going to cook it around 230* I figure a 12 hour + cook. Making mac and cheese, corn bread, and a little salad. Looking forward to a great dinner tomorrow in 70-80* weather.

I might have to come by to uhhh check on that brisket.....and take pictures.....
 
Don't be surprised if it's done sooner.. I'd expect around 10hrs.
 
Yes it is set it and forget it. I plan to eat around 4 pm so thats why I wa t to put it on at midnight. Then I'll go to sleep.

smokinjohn keep your windows open tonight and you might be able to smell the hickory and pecan smoke all night

You might be right. Guess im just hoping for a longer cook. When ever it gets done ill put the flat in the ice chest and make some burnt ends.

Forget to say when I get up in the morning ill be making a fatty. I'm going to fill it with a couple of hard boiled eggs and cheese.

If it's ready early than expected, it's no biggie.. it will stay warm/hot for hours.
 
Well its 12:45am. The brisket has been in the egg for about 30 minutes. THe egg is cruising along at 230* Time for bed. Pics to come in the morning.

Update on the brisket. After 6 hours of restless sleep I got up at 630 to put the fatty on the bge.

After 10 hours the bge is still going strong. I think a piece of hickory most have hit the hot coal because she started smoking heavy again.

10 hours in. THe bark doesn't seem to be getting stronger. Hmmmm Its still not probe tender, almost but not yet.

How much did that go for at Costco?
Just trying to find a consistent source of good beef in Ontario.
Costco has always been good for all sorts of beef...IMO
 
I usually can grab prime briskets from 2.69 to 2.99 a lb from costco. It was 2.69 for the longest time till this last time I went. For prime its a decent price in my opinion

I just checked it again 11 1/2 hours in. Bark is much better and almost probe tender . Couple spots on the flat still had some resistance. Ill chech again in an hour.

Nice cook...haven't seen prime up here...just choice. :sad:

12 1/2 hours and it finally probe like butta. I seperated the point cut it up and its back in the bge. The fkat is waiting in the ice chest. Mac and cheese is almost done then the corn bread goes in the oven. I decided to cook the mac and corn bread in the oven.

All done eating and cleaning. Now its time to rest.

Brisket and sides came out great. Total time for the brisket was 12 1/2 hours. I didn't have time to make burnt ends so after chopping up the point I added some sauce and threw them back on for about one hour. They tasted great and went pretty fast.
