Sauce for Pork Butt

Cooking a bunch of butts over the next couple of weekends and looking to mix up the sauce to try out new things. I know a lot goes into the flavor profile, but I thought I would ask what your favorite sauce is on pulled pork.

Bludawg Wild Hawg Gravy

1 quart apple cider vinegar
1 20 oz bottle ketchup
1/4 cup worcestershire sauce
2 tsp liquid smoke
1/4 cup paprika
1/3 cup molasses
1/3 cup sugar
1/2 cup corn syrup
1 Tbl Black pepper
1 Tbl onion powder
1 Tbl season salt
1 Tbl chipolte powder
2 Tbl red pepper flakes
1 tsp cinnamon
1 tsp all spice
1 tsp cumin
1 tsp mace
1 tsp ground ginger

Slowly heat in a non reactive pan to a low simmer. Simmer 15 min allow to cool and bottle. Makes 1/2 gal + a pint.

cider vinegar, crushed red pepper flakes, brown sugar, kosher salt, black pepper, few dashes of hot sauce
 
Commercially, I like blues hog tennessee red. Homemade....search for shack attack right here on this site
 
Strawberry's sauce. Go hot, and it will have a nice bite to it as well. It is a very heavy vinegar based sauce, that is made for pork!!!
 
I have been playing a round a lot lately with Sweet Baby Ray's cut volume for volume with Apple Cider Vinegar. Is really nice on spare ribs and pork butt.
 
Ive fallen in love with a mustard sauce recipe from another forum.. If your feeding a bunch of folks I would offer a mustard, thin red vinegar and a sweeter sauce as well.
 
If your looking for a bbq sauce I really enjoy this one

  • 2 fifteen ounce cans of tomato sauce
  • 3/4 cup Captain Morgan Private Stock rum
  • 3/4 cup cider vinegar
  • 1/4 cup brown sugar
  • 1/4 cup cane sugar
  • 1/4 cup molasses
  • 1 tablespoon honey
  • 1 tablespoon onion powder
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons paprika
  • 1 teaspoon chili powder
  • 1 teaspoon lemon pepper
  • 1 teaspoon liquid smoke
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
 
Don't remember where I found this, but I use this.

2 parts Sweet Baby Ray's BBQ Sauce
2 parts Apple Juice
1 part Apple Cider Vinegar

Warm to combine.

Hmmm. Sounds like my kind of sauce.... I think im gonna try this one

Fat Johnny's Bastardized Piedmont Sauce

1 quart cider vinegar
12 oz Sweet Baby Ray's BBQ Sauce
1/3 cup packed brown sugar
1 T red pepper flakes
2 T salt
1 tsp black pepper
1 tsp celery seed
2 T Worchestershire sauce
Juice of one lemon
1 T chipotle powder
1 tsp dry mustard
1 T onion powder

I agree. I usually offer 2 or 3 sauces, and a lot of people go for the mustard (which is also my favorite). Here's the recipe I use:


Vinegar Mustard Sauce:
· 1 1/2 cups cider vinegar
· 1 cup yellow or brown mustard [yellow results in a smoother sauce, but I think a mix of brown and yellow gives better flavor; I’ve also added some dijon for added bite in the past]
· 1/2 cup ketchup
· 1/3 cup packed brown sugar
· 2 garlic cloves, smashed or minced
· 1 teaspoon salt
· 1 teaspoon cayenne
· 1/2 teaspoon freshly ground black pepper
 
Another fan of Blues Hog Tennessee Red.
 
From this thread, I got the idea of mixing one part apple cider vinegar with one part sweet baby ray's -- wow it tastes good, thanks!

Then I messed around and threw a little oyster sauce and hoison sauce into that mix -- wow it's good! eastern sauces mix well with western it seems like! (well it makes sense since a lot of western bbq sauce has soy sauce in it). I put it on some incredibly juicy 1" thick pan fried pork chops--was yummy.

It is called soo-wee sauce - don't know why..

250ml (8 fl oz) apple juice
137ml (4.5fl oz) ketchup
3 tablespoons cider vinegar
1 tablespoon soy sauce
2 teaspoons molasses (i used black treacle)
1/2 teaspoon pure chili powder
1/2 teaspoon granulated garlic
1/2 teaspoon dry mustard
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
 
I have so many friends that like completely different styles of sauces and my mood changes so much it takes a few sauces to cover all the bases. Sooo here goes.

1. Simple carolina style as mentioned in earlier posts

2. Blues hog tenn red

3. Blues hog original (used mostly for dipping chunks)

4. Pee Dee river swamp sauce. This stuff is outstanding for covering the crowd that likes a bit of a mustardlike bite to their sauce

5. Texas Pete

6. Whatever super sweet sauce they holler for....SBR, bone suckin sauce, lotta bull ect.



At any time I could get a hankering for numbers 1-5. Not so much for the sweet sauces unless I'm eating somewhere else and wanna cover up something.:grin:

Many of the old pig farmers called the pigs at feeding time by yelling "soo-wee", I am sure it is a play on the phrase to associate it with the use of the sauce on pork (pig).
