Hey folks,
I'm smoking a cured ham for t-day (plus 3 turkeys) looking for a good rub. Probably towards the end of cooking i will put either honey or brown sugar then wrap with foil. any suggestions, maybe a ginger-y or clove kind of thing.
thanks

the ham is cured in a brine for 21 days, so it should be juicy enough, just want some spice on the outside

Try this idea;

1-1/4 tablespoon black pepper
1-1/4 tablespoon sugar
1 tablespoon paprika
2 teaspoons dry mustard
1 teaspoon fresh ginger
3/4 tablespoon salt
1/2 teaspoon ground cloves
1/2 teaspoon cayenne

Rub all over the ham then foil and set in the 'frige overnight.

The next morning mix together;
1 cup chicken stock
1/2 cup honey
3/4 cup pineapple juice
2 teaspoons oil
1 teaspoon dry mustard
1/2 teaspoon ground cloves
mix together and warm up on the stove then baste the ham several times during the last hour and a half of cooking.

I did one a couple weeks ago by just scoring the ham and inserting cloves, then the last part of the cook glazed it with Texas Pepper Jelly's Pineapple Habanero mixed with honey and pomegranate balsamic vinegar.

Try Dizzy Pig's pineapple rub with brown sugar. That should be pretty good.

Some Mary's Cherry rub mixed in with almost any other rub would be good, too. I use some Mary's Cherry on my turkeys.

I like to score mine, insert the cloves and then smoke. When it's about 30-45 minutes from done I give it a glaze of brown sugar, dry mustard, thinned down with a bit of pineapple juice...
