start it with smoke. Last easter did my brisket on my wsm, went to church and it started pouring icy rain! (yes, every once in a thousand years, southern california gets cold
) When I got home it was cold, coals went out. Threw it in the oven and it was a beautiful piece of meat! This was also my first brisket :)
