The Louisiana Burger

While I was looking for inspiration for the weeks Throwdown I came across this. My version of a Bobby Flay's creation. This is my official entry into "The National Burger Month" Throwdown.

I decided to try my hand at making my own hamburger buns. I'm not a baker and the results were okay but not great.

For the patty 1/2 lb. ground chuck seasoned with my own blend of Cajun Spices.

For the condiments I went with a mayo/mustard combo with some sweet relish mixed in pepper jack cheese, lettuce, tomato, and red onions.

Instead of bacon I used some Tasso I made a while back.

Cooked them up on the Cajun Grill with some Stubbs charcoal and pecan chunks.

This is my official entry to the Burger Throwdown!

Hi Brethren!
It's been awhile since Ive entered a throwdown and wanted to share A recipe Ive been working on all year now.

After the pink slime deal I started experimenting with different kinds of meat to make the perfect burger. Yes, I know you can buy ground chuck and the meat is good but I just wanted to see what I could come up with.

So let me start out with the meat that I chose for this burger.

This is 3 pounds of beef short ribs, 3 pounds of flap meat and thick smoked bacon. 2 slices per pound!

I cut the meat into cubs and put it in the freezer for an hour then ground separately.

I stopped by the Farmers Market for some fresh vegetables.

Pick up some of my favorite cheese.

Pulled out some soy sauce and some peppered cow to mix into the meat.

Mixed it all together to make my patties and onto the grill.

Grilled some pineapple and had some fresh strawberries from Farmers Market with my burger.

I have found this to be a GREAT combination of meat, bacon and vegetables.
I put mayonnaise, mustard, two strips of bacon, cheese, red onion, sliced jalapeño, tomato and three alarm cheese on my burger.

double patty, 80/20 ground chuck, with carmelized onions, LOL yellow merican cheese, special sauce, and martins rolls.

got more to add, but sooooo sleepy.....tomorrow.

a bit more on the cook...

i started by very slowly and carefully caramelizing a whole yellow onion.

i made a "specail sauce" with mayo, relish, ketchup, vinegar, and a dash of sugar. tore up some lettuce, sliced a mater, and butter-toasted the martins potato roll.

i also, blanched and then pre-fried some fries. here are all the playahs.

what good is a gooey, salty, burger without a shake??? none i say! so i made a vanilla ice cream and 90 proof kahlua and vodka milkshake.

smashed the burgers on the cast iron grill and assembled the bun.

fried the fries, and plated everything up. i'm a big fan of wrapping burgers and dogs to steam and meld all the flavors together.
