I decided to consolidate my last 3 cooks into one thread. They were spur of the moment cooks and I tried to keep them real simple.
First up is my first attempt at chicken quarters. They were tasty and came out quite juicy. Just a little too much smoke for my liking although the wife said they were perfect for her.

A couple days later I pulled a rack of St. Luis style out of the freezer before they got old over the winter.

About 4.5 hours. Came out perfect for flavor, and pretty good on texture.

....and finally last night's cook. The Mrs. brought home a rib roast. I had promised myself the next time I did one of these it would be a rotisserie roast. I took one look at the roast she brought home and instantly knew I wanted a nice cowboy steak. Cooked hot and fast. We were very happy with the flavor although at 160 internal they were a little more done than we prefer. I did let them rest in a cooler longer than usual so I think they cooked beyond what I was after.
