Hot and fast cook. 325* avg temp. On at 10am off at 3pm. 2hr rest this is what we got. Thanks for looking.

Dang, that looks great! Nice smoke ring, juicy and the only problem with it was that I don't have any!

Went to Costco Friday looking for briskets but they only had choice flats for $4.19 a lb. No prime and no packers.
 
put in pan with rack at 160*. added 1cup beef stock. wrapped with foil. left one corner open to vent. pulled at 198*.

So the rack held it up out of the Juices,packer or flat? That is the juiciest brisket i have ever seen and nice smoke ring. Great job :thumb:
