Which temp to trust? opinions needed

Ok guys i'm in the middle of doing a brisket on the WSM and the ET-732 is down to 207deg and the party Q says 235 where it is set. Which one to believe?
 
Move the probes to the same location and see if they then coincide, otherwise, get a third thermometer and see. Or, not, and just cook until it feels right. I would go hotter either way, more like 275F on at least one of the options.
 
Yea i clip the alligator clip to the Maverick. Don't put too much stock in them both being exact but remember you can calibrate the PartyQ. I usually do the ice water but can't hurt checking boiling temp at your altitude.

Also make sure food isn't too close to the probes.
 
I just did a cook last weekend where the WSM thermometer said 200, the Party Q said 240 & the ET-732 said 275.

I gave up on trying to figure out which was right. I just made sure to watch the internal meat temp to know when to start checking for 'done-ness'
 
This has been a frequent question here lately.


Remove the alligator clip from the "Party Q" and attach both probe in the cooker the same way. (IE: Clothespin or whatever you choose).

When both probes are mounted the exact same way and in the same area they will remain within 8 degrees of each other.

I don't have any issues clipping the alligator clip to the Mav.
 
Whats you lid temp say? My wsm lid temp is around 50deg lower than the grate

That's great that that has solved your issue...

With others that doesn't always work and they have continued readings still vastly different from each other.

Many times it's the Aluminum Alligator clip that causes the difference in the readings.

If you still have problems read the link below, those that had continued problems, once they attached both probes in the same manner the readings were consistent within 8 degrees of each other throughout the cook.

Never had an issue but...Aluminum clip?? Mine is steel
