POLL: Marinated Brisket For The GB/SF Game - Kiss It With Smoke -or- Cook In Oven?

Here is the situation, its going to be colder at my house than it will be at the game this afternoon. Mrs ~t~ bought a 6.5 pound choice flat, and found a couple of oven recipes that called for seasoning and marinating overnight, then braising (covered) in some of the reserved marinade. The one she selected has, for the most part, a lot of ingredients associated with brisket.... either in a dry rub or mop. Salt, pepper, cayenne, onion, garlic, soy sauce, Wooster, cider vinegar.... and a little Liquid Smoke :shock::shock: It has been marinating all night long.

Currently the temp is -8°F at the house of ~thirdeye~, the game starts in roughly 7 hours. I have a BGE and no problem with winter smoking.

So, what would y'all do? I need to get a game plan in the next couple of hours.

A. Roll with Mrs ~t's strategy and stick to the oven the whole time. (I only do one or two oven briskets a year, they are always good).

B. Intercept the ball and start it off on the smoker, then wrap with the reserved marinade and do an oven finish until tender. (I will smoke 7 to 10 briskets a year, they are always good too).
 
BGE... i'm not that cold today we'll just have the snow and wind but tomorrow and Tuesday i'll be smoking in the mini and jumbo mini with the 40 below wind chills. ( Water Boy) You can doooo it!
 
I'd vote for kiss with smoke and finish in the oven... That way you get the best of both worlds plus your nards have chance to warm back up by the time the game starts. :loco:
 
I have no problem using the oven to finish a cook, but I would still start it in the smoker.
 
I'm with Mongo on this one. Minus 8 degrees is one thing but the windchill is going to be dreadful!

UPDATE - temp is now -10° and falling. Wind chill is -25°.

I have the red lined Carhartts, not much tending once I'm at temp, and I forgot to mention that I'm doing a second smoke in my Little Chief on some hocks I smoked last night.... and I have to shovel the driveway anyways.
 
start it with smoke. Last easter did my brisket on my wsm, went to church and it started pouring icy rain! (yes, every once in a thousand years, southern california gets cold:cool:) When I got home it was cold, coals went out. Threw it in the oven and it was a beautiful piece of meat! This was also my first brisket :)

Another vote for a smoke bath before the sauna.

Put it in the oven. Relax in a comfy chair with a beer in hand whilst watching the game in comfort.

Heheheee. That pretty much sums it up.

Okay it's on. It smelled pretty good coming out of the zipper bag. The amount of marinade was just over 1 cup, so I had it laying fat side up all night, and it absorbed quite a bit of it.

There is something about grilling / smoking in inclemant weather that makes it special - Looks great!
 
I was kind of disappointed in the moistness (or lack of moistness) in this brisket. At first I assumed I overcooked it because it produced a lot of juices in the foil.... but it was not crumbly. It was just dry, so maybe I undercooked it.

Anyway I liked the flavor of the marinade and it went well with my rub... so I will be trying this again this time with more attention after wrapping. I did take a few photos, if they come out I'll post them later.
