After storm cook

I do have to day the backwoods cooks much faster than the WSM. Seems to me cooking at 240f on the BWS is like cooking at 275F on the WSM. Could just be me I did have many drinks in the process. đź‘Ť:)

How long does it take to cook the ribs?

I had the guru probe on the middle great set at 270F 4 hours in with no foil and ribs where over cooked. The only way I could get that cook time on the WSM is if I foiled. So I am thinking cooking on the BWS at 240f is where I need to be to fit my time line. I will be doing another cook this weekend and will see how 240f works. I will also add cooking with water it awesome I love the produced the BWS is producing. No for the brisket cooked at same temp in the BWS was done in 6 hours no foil pulled at 198f internal temp.
