I am doing 2 whole prime ribs in 2 weeks for the first time, what wood goes best with PR?

a lot of prople on here will say use apple or cherry. Which is good on beef but me personaly I would go with a hickory apple mix. The apple willl give a sweet taste and the hickory will add some depth to the meat.

Oak if you want a smoke flavor, hickory or pecan if you want a nutty flavor.

The best one I've ever had was done with mesquite, and no, it wasn't bitter at all.

I'm all oak on beef these days. Like mesquite a lot too but Oak is just awesome on beef

Dont forget to post some pics. Wife wants be to do this for Christmas. I have no idea where to start.

I like a mix of oak and cherry, but just my preference. Bet yours will be great no matter what you choose. Love prime rib!

Dont use apple, i didnt like apple on my beef, ive loved mesquite and peach.

I use the heavier smoke, as the beef really does not want to asborb fruit woods..a nice marbled roast will handle it and cook it hot...real hot

Ive done Hickory and Apple. It was awesome. I am going to do Oak next and see how that is.

French Oak Wine barrel staves are the best smoke for Prime Rib/Ribeye roasts.

Maple Mojobricks aren't bad either.
