Well I have been a little busy of late. I had to move in order to save a little money in this time of economic distress. I came across a WSM in the Atlanta Craigslist about 10 or so days ago and even in the midst of moving and the lack of money in my bank account I thought at 50 bucks plus an hour drive to pick it up there was no way I could pass this puppy up.
So here she is during her first smoke ... with me last Saturday night.
I tried to make a little money this season by selling butts and turkeys to friends, but only sold one of each. Not a lot of money but the money made will cover the cost of the WSM. I did up two 10 lbs butts. One was a keeper for my self and my new roommate and the other I had to deliver to a Yule party on Sunday. It was rather cold here Saturday night and we even got a bit of snow about 4am on Sunday, it was gone by 6am. I started the coals at 11pm and had the smoker up to temp by midnight. She kept temp for 8 hours easily, but I did add about 15 more briquettes at 8 am to make sure I had enough heat to make thru the rest of the cook. I wrapped them when they hit 155* and pulled them when they hit 205* at about 2:30 pm. I had to deliver the one for the party about 60 miles from me at 6pm. But when I got there the party was already underway and I had to work pretty fast to pull and plate the pork, so the pron is slim. And in truth when I pulled the other but today, I completely forgot about getting some pics.

These two butts were the best butts I have done by far. Not sure if it was the WSM over the ECBs I usually use or if it was the because I injected the pork for the first time. I still need to tweak out the injection recipe but it was pretty darn close to where I wanted it to be. I was asked to provide some 'Q' for a couple of events. So I will be working with those folks right after the holidays planning out a menu and a budget. So hopefully that will lead to more and more events just like this one butt did.
I figure with the money from the birthday party in early January they want me to cook for I will be able to cover the cost of the 2 Pro Q Excel 20's I picked up on ebay for a song. Can't wait until I can add those puppies to my smoking arsenal. Look out KCBS here I come!
Oh yeah, Santa also brought me a Hookah. Gotta love the folks I hang out with. It even came with a traveling case so I can take it with me for camping and comps. I will post pron of that a little later. Tine to get back to my Redskins!
