However its raining madly.... and I just mopped the kitchen floor yesterday.

Looks like its time to crank up the oven... preheat to 350.
Heat large skillet ... and add thinly sliced bacon.

Once browned - drain and remove.

Add garlic in the same pan... for a minute; then remove to the plate of bacon.

Now for for the protein -

BBQ inspiration: Rinsed and patted dry; added Simply Marvelous Peppered Cow rub, then to the pan.

(While browning the beef shanks; added 1/2 of the prepared bacon/garlic to the bottom of a small casserole pan.)

Once the shanks are browned; remove from skillet to the casserole dish than deglaze the skillet with one cup beef broth.
Once all flavors are collected - transfer to the casserole dish.

Placed the remaining bacon/garlic on top of the shanks.

Cover with foil and place in oven (gasp) for two hours.

Will respond with results and pron after two more hours....
