Spotted a trout in my freezer this morning so I did what any other hungry man would do... I thought about eating it. :heh: Did it up with some steak and a bit of lasagna tonight. Nothing tooo special, but it was good!

Took out the trout and after it thawed I oiled it down with some infused EVOO and put on a 2:1 sugar:salt cure and vacu-sealed it with some Jack Daniels and put it back in the fridge for 3 hours with a weight on top.

Then I seasoned up a beef filet steak with some of this fancy schmancy australian salt :wink::heh:

Smoked and grilled it all up with some guava wood for smoke.

A little JD infused honey mustard for the salmon...

Yessir! That whole thing rocks! The salt would have been awesome on the Salmon too!

Oooooooo...nice. Trout was the first fish I ever caught at age 4. Haven't had it in too long! Thanks for the post!
 
Thanks a lot guys! The trout was very nice. The mustard was just a mix of country dijon, honey, and JD... Hit the spot! :thumb:

Great looking feast there Phrasty! Is that Sea Trout or a landlocked trout?
