Thanks for the great info and explanations. One thing I noticed was the % salt you gave for Morton's Tenderquick wasn't the % of salt contained in the mix, but rather it was the amount of the recommended daily allowance of salt if you were to eat 3/4 of a teaspoon of Tenderquick. I searched around the web for an analysis, but couldn't find one.

Perhaps that's why the amount of sugar is listed as 0g as well.
