Grab the Blue Ribbon Cookbook (by the Bromberg brothers). The restaurant is in the central village (NYC) and their roasted beef marrow with oxtail marmalade is one of the best things I have ever eaten! The fried chicken recipe is also great.

I love marrow! I season and smoke then serve it on toast with a parsley/garlic salad like here and here. I did some marrow and had it on a steak the other day! Awesome!! :thumb:
