We had a couple boneless rib eyes marinating so we adjusted the cook plan to enter the current Throwdown
Rib eyes were already soaking in a mesquite / Bloody Mary mix
Here are the main players – Meat, Beer, Lump, and a Weber chimney

Cooking on a chimney of lump is hot and fast for sure
The Rib eyes was very good. The dark Beer added a different dimension and complemented our normal marinade very nicely. I will try this again
