Remember, it was your threads that got me to buy a YS1500. But don't worry, I'll switch to "blah on the Assassin 28" in a week or so for a while so you'll be in the clear. I'll play around with it for a while and see which one I like better. Hope you had a great Christmas and thanks again for all of the help and great posts. Oh and after I took your advice of the 100% Hickory pellets, the smoke flavor is very good. Unfortunately my big order of LumberJack 100% Hickory pellets was screwed up and I received 100% Hickory CookinPellets instead. They seems to work about the same though.
 
Just at Hy-Vee. It was the Amana beef at the counter, not the angus beef in the little cryovacs in the display.
 
You nailed it. This is exactly why I am a big fan of very low and slow for prime rib. I probably would have seared it anyway.
