Need Suggestions for upcoming iron chef event: Peaches

Anyone know of a good Q-recipe involving peaches? Even a non-Q main. We got one coming up on Saturday and as luck would turn out, my out of town trip was postponed so now we can participate.

Halve them. Put on grill fruit side down 4-5 min, then flip and fill with gorgonzola cheese 4-5 min. Put in a salad of Arugula and pecans with a balsamic glaze.
 
For dessert...aromatic smelling rum,crushed nuts (walnuts,pecan,pinenuts...),honey,lemon juice,Greek yoghurt or ice cream.....these are your Phriends!
Make it as Phunky as you like...throw in some red Phruits on there just to make it look pretty.
.....and a mint leave.
 
Make hog apple beans and use Peach Pie filling instead of apple. Thats what The Man in Black does.

In a sauce pan, melt down a jar of Peach Jelly. Use it to glaze a side of Salmon and Garnish with grilled peach slices and 6 inch chives. Thats always good.
 
If you do the peach beans, smoke them in Bell Pepper cups. That always makes a great presentation.

Take several strips of bacon and some kitchen shears and cut the bacon long ways into strips, one or two strip per rasher depending on how you feel. Make a bacon weave out of the this strips - put the bacon weave in the oven or on your smoker until it is good and crispy. You should end up with a bacon weave mat that is 8 x 8 or so. Use your kitchen shears to cut the weave mat into a nice square and then cut it into four parts.

Make a peach salsa:
1/2 red onion, diced
2 peaches, halved, pitted and diced
1 tablespoon lime juice
1 teaspoon olive oil
1 tablespoon chopped cilantro leaves

Let the salsa set aside for a minute and blend and when you're ready, spoon it on top of your bacon weave crackers. Sprinkle some chives or fresh cilantro leaves (chopped) on top. Serve. Win.

Voila.
