Setting up a BBQ Tailgate Business

Since joining this site, I have really come to the conclusion, that I love to cook. I like the prep, the serving, the commentary from folks as well as the time spent BS. That being said, I would like to cater to small groups at tailgate functions. Here in Wisconsin, we have the Brewers, Packers and Badgers. All are insane tailgate venues. My thoughts are this.

1.) I would only do it for a private party, so would I need some kind of permit? Or am I considered one of the gang who volunteered to do the cooking?

2.) Is it reasonable to believe that I could charge as follows.

a.) Three times the cost of the meat
b.) Extra for each side
c.) Extra for buns and condiments
d.) Include plates, napkins, utensils in the meat cost
e.) Provide the beer soda and booze at an extra cost
f.) A flat fee for my time, including setup, cleanup and travel.

Not sure were this is going, but somebody on here as already had this adventure, I'm sure of it. Please chime in. Am I nuts? Or is this a viable solution to fufill my passion for Q.
 
If you are cooking for somone and charging them, you need to be legit.

Insurance, permits, Servsafe, etc.

You wouldn't cut corners on the food, so why cut corners on the business?

Do it right, and it will pay tenfold.
 
you are taking on a huge huge liability if you want to serve alcohol of any kind, I'd go legit in the catering, but stay away from the alcohol...just my thoughts.
