Oh wait...Tex-Mex! Yep, this is my excuse to make a Tex-Mex meal. Not that I needed one. My plan is to make a pot of Texas Red and smoke some beef for tacos, tostadas etc. Being a BSU fan by default (my Daughter attends there) I plan on putting on a Tex-Mex feast to celebrate the occasion.

Leftover pulled pork is always a hit in tacos, enchilada, nachos, fajitas.... It's even good by itself with some Picante sauce!
