Little Dick's chicken ficks (pr0n)

Greetings,

Well, the missus has been after me to cook chicken (something about too much red meat, cholesterol, losing-weight resolutions, etc.), so here goes!

I went to the grocery store and picked out a 5.34-pounder. I asked the meat-cutter guy to halve it for me and he obliged.

To keep it simple, I schlapped on some EVOO and Simply Marvelous Sweet & Spicy.

I put the birds on the Weber OTG ("Fred") over a 3/4 chimney of Kingsford blue. I added hickory chunks and they schmoke-surfed ay 275-300F for an hour and 45 minutes (up to 164F internal). During the cook, I basted them thrice with a combination of my BBQ sauce, butter, honey, Sriracha sauce, and vegetable oil. Since I was unsure how long they would take, I started 'em too early and the wife-remember her, she wanted chicken?- would not be home for almost an hour. :doh:

I popped the chickens in a pan, covered 'em in foil, and threw 'em in a 175F oven to wait.

I took them out of the oven and lest them rest 10 minutes before chopping them up.

The verdict: oh my GOD were these GOOD!! The juice literally shot out of one when I cut into it. They were smoky, tender, juicy, perfect! I give credit in no small part to the Simply Marvelous rub. Great stuff!

Man....that does look good, just got my SM order in a couple days ago and was wondering what to use it on 1st. Looks like we're having chicken for the game tomorrow night , thanks for sharing. <<<<GO SAINTS>>>

You mentioned that you "put the birds on the Weber OTG ("Fred") over a 3/4 chimney of Kingsford blue". So did you cook them directly over the coals? How often did you flip them?
 
What a shame you had to eat such a "low calorie" meal!! That looks so farkin' good, thanks for the pr0n.....I'll be headed out to buy chicken today!

Ron,

I put the charcoal/wood chunks on one side of the grill and put the chicken on the other (so indirect cook). I put a wall of two bricks between the coals and the side of the grill. Works well; I think they absorb/diffuse heat and help keep the temp. more steady.

I didn't turn them at all.

I also placed a pan of boiling water under the chicken.
