Rib Roast for Dinner this evening

Hey there brethren. I thought I would share some pron of the Rib Roast that I did this evening for dinner. It was a small 3lb Rib Roast, slow cooked on the OTS. Roasted until IT hit 130 degrees. Pulled and tented in foil for about 20 minutes and then back on for a reverse sear. What a great cut of beef, so hard to mess it up.

Thats some great looking beef. I can't wait to try one myself. I have been holding off until I can get a group of folks together to help me eat a decent sized one. I'd hate to have to vacuum seal those and put them in the freezer...

I did a rump last weekend in the smoker. I wanted to slice so I foiled at 135* in a foil pan of 1c butter, 1c wine and 1/2c beef stock. Pulled it off at 180*, made italian beef sammys and used all the juice in my foil pan as au jus. Oh mah gah it was good.
