UDS Brisket question

Been a while since I pulled out my drum. I used to be pretty religious about flipping my meat cooking direct. Does anybody have any experience not flipping? I'd like to put it on and go to bed.
 
If your that confident in your UDS holding temps, go for it. I go 2 hrs fat up, 2 hrs fat down, wrap in bp till 205-210 when it probes tender. Usually bout 6-7 hrs total.
 
I've never flipped and they come out great. I cook fat side down and wrap in BP somewhere around the stall. Most times I cook over night while I'm asleep. Recently, I've used the IQ-110 for peace of mind.
