My Sam's has closed and I can't get bone-in pork shoulder. I joined Costco but they have only boneless pork shoulder. Is that an ok substitute? Cooks the same? Thanks.
Hey there. I’m in Chicago burbs. If you can, do the KCBS membership and then go to Restaurant Depot. There is one in Des Plaines near Allstate Arena, and then another one in Lomabard. Been getting fantastic bone-in butts from them at fairly cheaper prices than Sam’s or Costco.
Talk to the meat department at the grocery stores. They typically get bone-in butts from their distributor, then they cut them into pork steaks, country ribs... and some stores even grind them for their own sausage. You might be able to just buy bone-in them from them.
