Well I recently cooked 6 pork butts getting ready for various holiday parties at my work. Six butts is a lot of meat on a Bandera and I had some airflow issues causing problems keeping the temps up as high as I would like. Until i turned to some of the brethren here for some advice I could not figure out why I could not get the darn thing up over 220.
A big thanks to The_Kapn for his quick response to my pleas for help. I also have to admit one bone head move. I had so much meat jammed in the cooker the One temp prob was laying almost dead under a big butt and the door probe was sticking into the side of butt, so for about 2 hours I don't really know what my temps were, though I am fairly certain they were still low. Finally got the thing humming around 275 to 290 and finished the cook quit nicely with over 30 lbs of pulled meat.

Hope you enjoyed it as much as I did cooking it. this was the largest cook I have done so far on this Bandera and it was a full day of smoking but i look back on it fondly!

Gorgeous bark on those butts. They look really delicious! :thumb:
