Hello all. I have been smoking pork butts whenever i have friends over, and i always get the suggestion of catering. So i finally decided to do it. I got my first call. It is for a wedding. There will be 100 people there. They want 3 sides and a desert, as well as drinks. I have never catered, and i have no idea how to bill. Could you guys recommend what you would do charge wise. Oh, no tables or chairs needed, as well as they don't want servers. more like a drop off a hot buffet. How much coleslaw and baked beans would i need for 100 people. I am gonna build some uds, would two be enough for the wedding? i have 3 months to work this all out. Any help you guys have will be greatly appreciated.
