Underground Pig (picture heavy)

I'm a believer! So how do you keep the dirt out of the pig once you bury it? Do you put plywood over the hole and then cover in dirt? Looks like it would be fun! So how long total do you leave the pig covered? You said overnight are we talking 8 to 12 hours?

David, I used three pieces of metal to cover the hole....then buried it with dirt, making sure the edges were sealed. I cook pigs 125 and over underground and plan on at least 12 hours. Anything smaller will not take that long...you can do it in one day. It takes so long to burn the wood (about 5hours) to get a deep bed of hot coals, it's just easier for me to do that the night before and go to bed, letting the pig cook overnight.

Kudos to you. One for teaching us all about another 'dish', using great directions and even better pictures, and two for gritting your teeth, biting your tongue, punching the walls, or whatever it took to deal with...adversity.

That is some type of deer camp. Did you get any deer? I am still trying to get my arms around the whole buried pig thing. I know they do that in Hawaii and stuff but can't get through my head how the coals keep going. Would love to try that some time. Nice job.

The bed of coals are so deep that they last all night. You do have to use hardwood though and plan on at least one foot or more of coals.

Thank you again everyone, it's an easy way to cook a pig. Well... once you get the pit dug, the pig cleaned and the wood burned. :-D

I think a lot of people are jealous about the way you live, being self sufficient in many ways (maybe even all the way) and still enjoying the good life and document it in a beautiful manner. I know I am :-D

I was wondering did you do anything with the offal?!?
 
Thats awesome!!! We have a couple that do a pig in the ground every year. They make t shirts etc for it.

I love your post. First time I ever seen using blow torch for burning hair we always scald and scrape I bet it sure smell bad.

That was my first thought too when I saw that picture. The only method I've seen is build a fire under a large tub and scald, then scrape the hog...

The blow torch method seems it would be much simpler if you can stand the smell.

you handled it just fine. i imagined you going out and splitting logs or throwing hatchets or something after you read that guys comments.

I just got caught up on this thread and as always Jeanie your talents are just plain jaw dropping. Your pics and discribtion of how to do a pig underground clear up most of the questions I've always had about trying it but is still takes experience and confidence to pull it off and that is what I admire about you.

WTG Cowgirl you are one awesome lady. I for one would love to have the BBQ Talents that I have seen with your Pics. That pig looks incredible. Love the way you cooked it. looks like it would be fun to try. Always look forward to your posts

I understand the depth of feeling I stirred up, but I never, EVER, made any remark about women being unable to accomplish anything they set thier minds to, nor did my post imply such.

That was a beautiful tutorial of cooking a pig in the ground Jeanie, your skill and knowledge of cooking inside the kitchen or in the smoke house, a UDS, fire ring, hole in the ground are outstanding. You have a wonderful gift of sharing and have the advantage of being a excellent photographer. Unfortunately there is negativity on our path of life, I applaud the way you handled it. The food looked wonderful
