Nice work!
I used to do the hang/wrap/glaze method, but now I've gone to
hanging
them for the whole cook. Hands down the best loinbacks that I've ever
cooked. No more wrapping for me! Oh, and there's no need to cut the slabs
in half. Let 'em hang!
