I was in a hurry to get dinner on the table tonight and none of the usual quick dinners in the fridge. Wife asks for chicken and pasta. Chicken is frozen, no time. Then I thought about Hotch's Pig Cakes. I love those things! I had leftover PP in the fridge so I started the with the PP cream cheese mixture for the pig cakes. Dipped them in egg and coated then with Parmesan breading instead of the Pig Cake coating. Fried them up in the skillet and poured some warm red sauce over the top.

They were really good but not as good as pig cakes.

That looks really good. Thanks for the link to Hotch's recipe. I also found the Baja Wave Tequila Lime Tacos recipe. I have a butt ready for Sunday and now have two new ways to use the pulled pork. Yes!!
 
The plates are telling your age........got the same set for my wedding and there still in use lol
