Leftover turkey......what's YOUR favorite recipes?

We have a chicken enchilada soup recipe that I've made a few times recently that I'm planning on putting turkey in.

Cream of turkey gravy on toast is another favorite.



What else?
 
Turkey enchiladas, Hot Browns, Turkey & Dumplins, Turkey Pot Pie.
 
Turkey soup .... or more appropriately, Thanksgiving soup.

Boil turkey carcass with celery, onios, carrot and chicken stock
Add leftover turkey
Add leftover gravy
Add vegetables (whatever .. corn, green beans, etc)
Add leftover mashed potatoes
Add leftover stuffing

Season to taste with salt/pepper ...I like to use some seasoned salt and tony chachere. Bring it to a coil to incorporate all the thick stuff and then simmer away.

Makes for one amazingly flavorful soup. It is like Thanksgiving in a liquid!

Gumbo! We use mostly dark meat and add andouille.

I like a classic leftover sandwich...

Turkey, gravy, dressing, and cranberry sauce on white bread.
 
I'm making a pot of beans with mostly dark meat smoked turkey and Bolner's Pinto bean seasoning.
 
Turkey enchiladas, turkey chili, turkey soup, turkey salad sandwiches, my wife eats "Thanksgiving sandwiches" with mayo, turkey, and cranberry sauce... ugh. Gonna try some cabbage rolls with turkey this year too, with the leftovers from the fried turkey. Ohhhh yeah.
 
I guess I didn't cook a big enough bird. 10lbs for the 2 of us, and we really don't have all that many leftovers. We did open faced sandwiches once, and will likely do the stuffed fatty that I saw here the other day. At that point, we will be about out. Some scraps left for the dog, but I'm looking at maybe one more sandwich? Guess I need to get another one to cook!
 
Had to Google Hot Browns. Sounds pretty tasty there.

Another gumbo maker here. Vac-packed the turkey carcass the other day & gonna vac-pack any left-over turkey tomorrow.

Been eating turkey on rye (with some hot chow-chow) sandwiches but ready to move on.
