Hello all! Yam Dankee from NJ living SC now. I've been smoking on an offset smoker for several years now. I found this forum because I am building my first UDS and in the process of over thinking things.

I've mostly smoked pork butts and all styles of pork ribs (a lot less successfully) and have recently dabbled in brisket with some success.
