Costco had some plate ribs a couple weeks back. This was just under 6 lbs. I cut in half before cooking and glad I did. The thinner side was done at least 45 min sooner. Seasoned predominantly with salt/pepper and just a little onion/garlic powder. Cooked at 275-300 then ramped up to 325 trying to get them done so they could rest. The bark was just a touch dry but the meat was rich and juicy. Definitely a rare occasion type of thing. Next time I would plan more time and stay at 275 or wrap in butcher paper the last hr. Overall they were fantastic!

Looks awesome. Pretty sure those are chuck ribs though.

The package said beef plate ribs on it but that's all I know. The two pieces in the pics where one when purchased. I cut them in half.
 
6 bones total that are more round than flat usually mean they are chuck ribs. But damn good eating for sure.
