Sunday we had to check our equipment and make sure all was okay for an upcoming contest. I ran by Sam’s and got the last Brisket they had. It was a 12 pounder and I questioned it but we needed to run a long cook so I took it.

Brisket trimmed to 10 lbs. after injection and rub.

Inspired by Cowgirl lady I thought I would get foggy with what I found in the fridge but I did not get fancy

Thank you for looking but for the life of me I don't know how you all cook and take pictures at the same time.
 
It went well but that brisket was not the best - should have gone with a pork butt.
 
The picture sure made it look good. Was it the taste that you didn't like?

It just wasn’t the best brisket – it was the last one at Sam’s and I have seen better. I also have seen worse though.

I'm curious, what all did you do here in this pic? What's on that sammich?
BBQ baked beans, Potato Salad and the sammich was brisket reheated in its Aus jus topped with Colby Jack cheese with tomatoes, onions served on a cheese bun.
