Made a batch of chili verde for the work chili cookoff...started with some country style ribs, and did a (tender)quick cure on about half of them.
smoked all of it on the WSM over cherry and mesquite
then made a fire in the kettle with some mix maple and mulberry
roasted some tomatillos, poblanos, some jalapenos and a bell pepper
peeled it all, and put it together with some homemade chicken stock, and threw in the cubed up meat, and simmered for a few hours...
got lots of great feedback, but couldn't quite defend my title...went to what was, IMHO, a fairly run of the mill and ordinary red :tsk:
guess I'm gonna have to step up my game next year :evil:
