Knows what a fatty is.
I am struggling in the Charlotte area to find a quality bone in, ready to cook ham. Any ideas? Went to restaurant depot today and all they had were 3 fresh hams and a pile of PIT hams. They all had a pretty high percentage of water added. I dont think I am ready to cure a fresh ham yet. On another note, I did find a pretty nice looking CAB brisket and a nice roast beef slicing knife!
