Did I slice it the wrong way?


The taste was outstanding. I used Simply Marvelous sweet and spicy rub, with cherry chunks for smoke. Smoke for about 5 hours at 225.

I sliced the remaining half the other way, the meat was more tender.

It's hard to tell from the picture, but it looks like you were with the grain instead of against it.
 
Looks great! :hungry: I've done most of my briskets on my mini - it's an incredibly versatile cooker.
 
Welcome and thanks for posting. Oustanding job. Looks the first cut was with the grain. If the second cut was more tender than that was right. Keep cooking you got it
 
Awesome first post. Brisket is a toughy to get right. Yours looks really good. When I have doubt about the direction of the grain, I just give it a pull. The grain stands out and makes it pretty obvious. Nice job!
