8.5# flat preseasoned as corned beef.
Soaked 4 days with twice daily water chages.
Seasoned with Third Eyes's Rub

Had to slice a corner and sample, the rest is cooling, will slice later tonight!

It will be a lot tenderer if you steam it for a couple of hours before you slice it.
 
Looks awesome from this angle! I've done a few of these and I think cameraman is probly right. My first one had great flavor but certainly needed the steam.
