We are getting a bumper crop of tomatos now. We planted Plum and Early Girls.

We started out with BLT's - I love a good BLT.
I usually make Tomato pie when the tomatos come in, and this year I wanted to try something a little different.
Diced up some tomatos...and let them drain.

Got out my mini muffin tins and created a template for the dough.

Filling
Equal parts mayo and your favorite cheese.
Tomatos
Fresh Basil

Into a 350 degree oven till everything is melted and bubbly.

The original recipe calls for this to be made in a standard pie plate, and to layer the tomatos and basil and top off with the mayo/cheese mixture.
I wanted to see how these would do as an appetizer and I think they work. The only thing that would make these better????

We like making fresh bruschetta too. We just made some tonight.
Garlic, basil, tomato on fresh toasted bread slices.

I'll be those are better, though!

looks great! Yes bacon would make it better and maybe a slice of Jalapeno for people who want a little heat.
 
I had to look at these again. Man, they just look waaay to tasty. I really wish I had done tomatoes in the garden now this year:crazy: lmaj, thanks for posting such a great looking treat!
 
Those look fantastic :clap2: When I make roasted tomatoes I stuff them with two kinds of cheese and either Bacon or sausage. I do like the pastry idea a lot will have to try this the next time:-D
 
Oh, forgot. Almost anything added to this idea would be good, from bacon to a shrimp or scallop topping...but I really like it just simply as you prepared them.
 
Makes me wish I had an oven. And some tomatoes. And some mayo. And cheese. And bacon. Makes me wish I was back home in NY :(.

Or for someone to mail me some of those :D
