Smoked some Iowa chops Monday night along with some salmon and bologna..

That looks great, but fess up. Where did you get the sweet corn this time of year in IA?
 
That is a one big combination plate of some of my favorite stuff.

Will you share the specifics on the chops and sausage?

Chops were on the BDS for about 50 minutes with the pit around 240*. Flipped them half way through and sauced both sides. Turned out REAL juicy!

The bologna is from Pella, Ia. (large Dutch population). Great stuff. It was probably on the drum for 40 minutes. Flipped half way through. My favorite part of the meal!!

Hey did you remove the skin from that ring bologna before you smoked it or leave it on? Was it a natural casing?
 
Hoowee! Those chops look incredible, and what I wouldn't give for some of that ring bologna. I can't find it around here anymore. You've got all of my favorite things...pork, bologna, corn, and mac'n'cheese. Color me jealous.
