Seafood Category - Down South

So what do folks cook for seafood catagories in the south (Memphis area). Scallops, clams, oysters, lobster...just not sure where to start.
 
Catfish and Carp are about the only native seafood to that area... :)
 
Fresh water mud bugs. Don't know if they'd do well in a comp, but folks love 'em round here if done right.
 
I bet if you PM'd TooSaucedToPork he'd have some very good advice. He does MIM on a yearly basis.
 
Personally, I'd go with shrimp. Pretty much everyone likes shrimp, where it's hit and miss with oysters and clams. Either that or lobster if the cost/reward ratio is good enough.

I'll second this. When I moved down to the south I had never heard of a low country boil, now I eat whenever I can. Fantastic stuff.
 
I don't know about seafood in comps, but +1 on the Low Country Boil!! Yum!
