Marinaded the ribs for 12+ hours with a mixture 12 oz wife's homebrew Irish stout beer and 1/2 cup Allegro marinade per rib rack. Sprinkled McCormick Cowboy rub. Also doing a chub with a base of yellow mustard and the same rub. Mopping with wife's secret mop sauce. Smoking with a combo of hickory lump and mesquite chunks. Aiming for a temp of 300 F.
First pic 2 hrs in at 250 f. Aiming for 300 f, but this will do. Took pic before mopping.
3.5 hrs in prior to second mopping.
Pulled the ribs after 4.5 hrs at roughly 300 f and put on the chub.
About 45 mins into the cook I applied one coat of mop.
Pulled after 1.75 hrs.
