Got the idea for the fried corn from this thread. Since it is starting to come out in season, I bought some fresh corn. Didn't have bacon grease so I used butter instead. Cut corn off cobs, fried in butter with onion, garlic, salt, pepper, crushed rosemary and some cilantro. I threw a fresh chopped tomato in right before serving.
Tasted great, I will definitly do it again. Nice thing is you can add almost anything..it is very versatile. Next time I'll try it with SPAM in it!

That looks good. The burnt ends are called chopped brisket around here. I love em.
