Best way to interview people. Tell them cook a rack of ribs to kcbs spec. That means they know when they are done/overdone. Undercooked ribs are the worst.
 
Okay, okay, I know this is all a sham, aimed at getting me to move south and run the pit.
 
My neighbor (an ex-restaurant manager) gave a big shout out to your new pitmaster. He and a friend of his visited you guys recently, and got a tour. They were VERY impressed.
