I went camping last week. Used my little charcoal cooker for most meals. (campfires were not allowed)
remaining hot coals from breakfast cooking...
Spares with SM Season All...
smoked for 3 hours... (turned and rotated several times while cooking)
foiled for 1 hour with beef stock, onion and granulated garlic...
watched for pull back on the bone. I'm not fond of "fall of the bone" ribs... I like a little bit of a bite.
unfoiled for 1 hour....
heated pot of beans with bacon, onion and spices..
and sauced the ribs for the last 30 minutes or so..
3-1-1 spares with beans and slaw..
This was the first time I did spares on this cooker. It worked pretty well, I added a few hot coals one time during the 5 hr cook.
The week of camping was fun. :grin:
